Great News! Cookware to Close - Gourmet Retailer

Great News. Cookware and Cooking School, the 2011 U. S. gia winner and a former Gourmet Retailer Kitchenware Retailer of the Year, is going out of business after 38 years. Located in the Pacific Beach area of San Diego, the store has about 40 employees. Owner Ron Eisenberg is closing the 6,200-square-foot store with a 7,000-square-foot warehouse at the end of the month. The cooking school closed at the end of June. Over the years, Great News. became a destination for high-end, quality cookware, cutlery and small electrics. More than 60 percent of its customers traveled more than 5 miles to reach the store. When contacted by The Gourmet Retailer, Eisenberg confirmed the store's closing but politely declined to elaborate. Four Decades of Retailing. Before opening his first housewares store, Eisenberg was a pharmacist. "I learned everything I thought I knew by running two corner drug stores," he said. "I took the same concept of listening to the customer. As I listened, our list of customers grew, and our store evolved from a functional housewares and gift store with a greeting card department. to a full-blown kitchenware store. Featured on the cover of the February 2012 issue of The Gourmet Retailer , Eisenberg said connecting more with Generation Y consumers was high on this to-do list. "It's our biggest challenge today," Eisenberg said. "How do we convince younger consumers that we know more than what's on their smartphones. They don't trust sales associates. Great News. had its best year ever in 2010 —double-digit growth— because it never stopped advertising and promoting, Eisenberg told TGR in 2012. Later that year he teamed up with Chefs Press to publish a cookbook, "Great Food. Four Season of the Best Classes, Recipes, Equipment, Techniques and Tips". Aw, shucks! There's better way to fix corn - Quad-Cities Online

Question: When preparing sweet corn, what's the best time to remove the husk -- before or after cooking. Answer: Neither. Prepared properly, an ear of corn will need no shucking. the ear will slide smoothly from the husk with almost no effort on your part. I know what you're saying: Go back to New York and hawk Japanese cutlery on the corner in front of Dirty Ed's Discount Emporium, you no-good liar. Sorry, friends, this week I'm waving the Banner of Truth. The following information comes from the world's most trusted source of information: YouTube. It has been tested in the Midwestern Culinary Laboratory (“Frank Mullen's kitchen”) by the highly-trained staff of Certified Corn Preparation Technicians (“Frank Mullen's wife”). To prepare sweet corn effortlessly:. – Cook the corn in the husk using your preferred method. Boil it, microwave it, roast it, hold it in the sun under a giant magnifying glass. The key here is to cook your corn fully dressed. (The corn, I mean. It doesn't matter to me whether you're wearing a tuxedo or your birthday suit. Of course, if you're grilling corn at the Daughters of the Prairie annual picnic, it matters. – Lay the cooked ear down on the counter. You may wish to use a cutting board, as knives are about to come into play. – Cut off perhaps one row of kernels at the shank end. (The shank is the stem that held the ear to the stalk while it was growing in Farmer McGregor's field. The shank of your ear may be missing. It’s not a problem, since Farmer McGregor is missing, too. He was bought out years ago by Archrival Denial Middleman or one of the other agricultural conglomerates. – Hold the ear firmly in one hand and, with the other, squeeze the pointy end. Within half a second you will scream, drop the ear on the floor and plunge your hands into cold water because I forgot to tell you to use a potholder. Don't blame me. you're the Midwesterner here, not me. You've been cooking corn all your life and I shouldn't have to remind you that holding freshly-cooked corn in your bare hands is as safe and sensible as juggling flaming coals. – Let’s try that again: Using potholders or asbestos gloves, squeeze the pointy end of the ear and prepare to be amazed at the results. With the husk still in place like a protective coating, the ear slides gently out of this wrapper and onto your plate. This method not only. Source: www.qconline.com

Cheap Eats: McCann's makes a mean Sloppy Joe - Rochester Democrat and Chronicle

The joint : McCann's Local Meats, 739 Clinton Ave. , Rochester, NY 14620, www. mccannslocalmeats. com (585) EAT-MEAT (328-6328). Takeout, dining it, and full-service butchering. The meal : Sloppy Joe with fried egg and cheddar, braised greens. The check : $10. 18. The story : I was minding my own business, just strolling down Goodman Street with Violet, my Bernese Mountain Dog, when a woman yells from the other side of the street, "McCann's Meats. " With the traffic, it sounded like, "Mmmmm mmmmm," which, little did I know, was oddly apt. She yelled it a couple more times before I crossed the street to get the news. McCann's is a new butcher shop, specializing in locally-sourced meats, which serves daily sandwich specials, she explained. She'd loved her Korean short rib sandwich. The butcher's wife, she said, is Korean. Intrigued, off I went. McCann's makes an impression: large, airy, beautiful in a modern-but-not-too-modern way, smells great. It's set back from Clinton, so you could miss it. Owner Kevin McCann says, "People are going to come because it's a destination. I found myself there three times this week, twice for sandwich specials, once for stir-fry meat (fabulous inner skirt, $9. 50/lb). Was I a little disappointed that first day when they said the hot lunch special was a Sloppy Joe with fried egg. Never been a fan. But… Oh… My… Freakin'… God. Out it came, a mile high on a fresh roll from Dragon Sweetie around the corner: rich, aromatic, sweet but not cloying, the perfect amount of cheddar, and that fried egg, which made it like the Breakfast Sandwich of Champions. I grabbed my Fine Plastic Cutlery and devoured the thing in about 3 minutes and 47 seconds. It's the best sandwich I've had out in years. The braised greens were kale with a bit of garlic, cooked crisp-tender, also awesome. They allowed me to pretend I was being health conscious. The options : You can add one of a wide variety of sides for a buck (the hot lunch special lists for $8. 50). That first day, they had beet salad, roasted potatoes, egg salad, japchae (Korean sweet potato noodles), black bean salad, BBQ baked... All are available for takeout by the pound. The hot lunch special changes every day, but McCann says you can pick just about anything in the meat case (there are perhaps eight varieties of sausage, for. Source: www.democratandchronicle.com
